LIGHT WHITE FISH SOUP

My husband had been cooking seafood chowder for so many years. It is always him, who prepares this creamy and rich seafood soup and it had always been a big winner in our family and my hubby’s signature dish.

 

One day, we sat together with my husband, after we stuffed our bellies with rich seafood chowder and we literally couldn’t even move, how full we were. So I told him, what if next time, when we make seafood chowder, I will try to let go of thickeners and will make the seafood chowder more lighter.

And here is where the idea for recipe of Light White Fish Soup was born. It still does remind the seafood chowder, because of all the vegetables, seasoning and the seafood, but it is not as heavy and rich as seafood chowder.

Main Ingredients

  • White fish such as tilapia
  • bacon
  • hearty vegetables
  • corn

This light white fish soup has a base of hearty vegetables, such as carrots, celery, corn, onion, potatoes and garlic. Those are vegetable, you usually have on the bottom of your refrigerator, so only needed is the white fish. When it comes to soup, i usually use frozen piece of fish, but this time I have used fresh piece of tilapia and let me tell you, it completely changes the game, if you use fresh piece of fish.

Another great idea, how to add more flavor to the soup is to fry the fish on a pan, before tossing it in the soup. This is totally optional, but it really gives more texture and flavor to the fish, instead of just adding it and cooking it in the soup.

 

The main and the best ingredient in this light white fish soup, in my opinion, is bacon. Bacon makes everything better, so don’t be shy and add few pieces of bacon. Trust me, you will not regret it! I literally toss bacon into everything, well savory dishes only!

 

When I make this soup, I always have my homemade ezbread on hand and I make sure to make a double portion, because this bread goes fast of the table. Starting in the morning for the breakfast feast and ending as a snack bread with a thick layer of nutella or jam 🙂 Either way, this bread is a big hit in my family and we can’t get enough of it 🙂

RECIPE

LIGHT WHITE FISH SOUP

Preparation time: 20 minutes ⭐cooking time: 45 minutes⭐ servings: 4-6 persons

INGREDIENTS:

  • 1  medium onion
  • 2 medium carrots
  • 4 cloves garlic
  • 3 stalks of celery
  • 4 slices of bacon
  • 2 cups corn
  • 2 large potatoes
  • 1/2 tsp ground thyme
  • 1/2 tsp ground mustard
  • 1/2 tsp ground saffron
  • 4 balls of all spice
  • 2 bay leaves
  • 4 cups chicken stock
  • 1 cup regular milk or coconut milk
  • 2 lb tilapia fish
  • salt and pepper
  • 2 Tbs olive oil

INSTRUCTIONS:

  1. In a large heavy pot, heat the olive oil and add sliced bacon. Sweat the bacon for 5 minutes on medium heat.
  2. Add chopped onion, crushed garlic, peeled and cut carrots, cut celery and cubed potatoes. Sweat all the vegetables for 10 minutes on medium heat, until light brown, stirring frequently.
  3. Now add all the spices: salt, pepper, ground thyme, ground, mustard, saffron, bay leaves and all spice balls. Stir and cover with the lid.
  4. Optional: In the meanwhile, you can season and fry the fish tilapia on a pan. Two or three minutes from each side.
  5. Now add chicken stock and the white fish tilapia in the heavy pot and simmer covered for 15 minutes or until the potatoes and other vegetables are soft.
  6. At the end add either milk or heavy cream to the soup to add some body and stir. Season with salt and pepper, if needed.
  7. Remove the pot from the heat, but let it stand on the stove for another 15 minutes covered, not cooking.
  8. Before you serve the soup, make sure you have a nice piece of fresh bread on hand!
  9. Enjoy!
