VALENTINE’S CHOCOLATE CHIA SEED PUDDING

Chia pudding, as you already observed, is my new obsession:-)! Why? Let me explain you why. As i am loving sweet treats and mostly with smooth & luscious texture, like cheesecake, creme brule or simple panna cotta, I need to be careful, how much sugar and how much calories these yummylicious treats offers.

 

Already, when we speak about sweet treats, it’s meant to be something special, on special occasions, not to be served often and surely not to be abused. Meaning, I can’t eat all those sweet treats mentioned above ,every day. When speaking of caloric cheesecake or creme brule or delicous panna cota 🙂 So I have read lately a lot about chia seeds and how many great nutrients it has and how incredibly it is in low calories. So chia pudding has become my second best friend, when it comes to daily sweet treats.

1 cup of chia pudding made with unsweetened almond milk and sweetened with maple syrup has around 150 calories, 5g of protein, 3g carbs and 10 g of fat. I see low calorie intake, great source of protein, lower on carbs & fat. If you take a slice of chocolate cheesecake as your afternoon dessert, it might go up to 450 calories, 7g of protein, 46 g of carbs and  33 g of fat.

What a difference right? But the most important, chocolate cheesecake will contain much more sugar (and we are talking about refined sugar most probably) then chia pudding, plus you can control how sweet you will go with chia pudding. This was just an example of daily consumption of sweet treats like cheesecake. I presume, you don’t demolish a slice of cheesecake a day, but just a thought.

 

Obviously you want to treat yourself well for Valentines day, but why not to have a luscious chocolate chia treat instead of heavy chocolate cheesecake bomb. Would be a wise decision and I am sure you will love it. This recipe for Valentine’s chocolate chia seed pudding will give you the right chocolate satisfaction, without compromise and guilty after-thoughts.

This chocolate chia seed pudding recipe is  made from my base recipe  , which contains 1/4 cup of chia seeds, 1 cup of almond milk, 1 tsp of maple syrup. I am adding melted dark chocolate (you can opt for milk chocolate as well) and I am the topping is simple Vanilla Greek yogurt 0% with extra protein to keep you fulfilled. Little raspberry touch & small gluten-free chocolate heart cookie for decoration, are optional (but delicious).

This chocolate chia pudding can be stored up to 3 days in the refrigerator, or you can freeze it (without any toppings ) and defrost it overnight in the refrigerator.

RECIPE

VALENTINE’S CHOCOLATE CHIA SEED PUDDING

Preparation time: 30 minutes ⭐chilling time: 2 hours / better overnight⭐ servings: 2 servings 

 

INGREDIENTS:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tsp maple syrup
  • 1/2 cup dark chocolate (milk chocolate) or 2 tsp cocoa powder
  • 1/2 cup of Vanilla Greek yogurt
  • fresh raspberries for decoration
  • your favorite heart cookies

INSTRUCTIONS:

  1. Combine the chia seeds, almond milk and maple syrup together in airtight container. Whisk until well combined.
  2. Cover the container and place it in the fridge for 2 hours or overnight to firm up.
  3. Melt dark chocolate in microwave and mix it with into the chia seed pudding mixture.
  4. Into 2 cups ; layer chia pudding up to three quarters of the glass, then add few spoons of Greek yogurt.
  5. Top with raspberries, mint leaf and few heart cookies.
