I am sure, that you have heard many recipes for oatmeal cookies. And you probably even tried many of these great recipes for oatmeal cookies from your friend, colleague or even what seen on the food channel.

 

But these oatmeal cookies are made with love and by my husband 🙂 so I consider these as the best oatmeal cookies in the world ;-). I love when my hubby is in the kitchen. It doesn’t happen often, especially when it comes to baking, but he won’t stop surprising me.

 

Like with those oatmeal cookies, one day, he just decided to make oatmeal cookies and wanted to cut down on the sugar, so mixed up few recipes together and voila great oatmeal cookies, with almond flour and chocolate chips is born.

I am extremely proud of him, because this recipe for oatmeal cookies came out really great. It has it’s chewiness, soft center because of the almond flour, which btw added super extra yumminess into the cookie. Slightly crunchy on the top and instead of raisins, chocolate chips. What can be better then chocolate chips right?

 

I might try next time adding dark chocolate chunks instead of milk chocolate chips, and little Himalayan salt to bring it to another level and add more healthier vibe into this recipe. But for the first time making oatmeal cookie, I have to give him a big credit!:-)

OATS

In this recipe we’ve used organic instant quick whole grain rolled oats and I think this made also the cookie more soft and chewy texture. If you’d like to use whole old fashion oats, the texture of the cookie will be slightly rougher and harder to chew. This is why I prefer instant quick oats.

 

ALMOND FLOUR

If you will follow the recipe, you will notice, that my husband has used almond flour instead of all purpose flour. It wasn’t intentional to make this recipe gluten-free, almond flour was used to improve the taste of the cookies.  And it came out so well! 🙂 So now, we are so happy, that even our gluten intolerant friends can use this recipe for oatmeal cookies.

RECIPE

OATMEAL COOKIES WITH ALMOND FLOUR AND CHOCOLATE CHIPS

Preparation time: 15 minutes ⭐ cooking time: 14 minutes ⭐servings: 14-18 cookies

 

INGREDIENTS:

  • 2 1/4 cups instant quick whole rolled oats
  • 2/3 cup almond flour
  • 1/2 teaspoon ground cinnamon
  • 1 pinch of salt
  • 3/4 cup  unsalted butter, softened
  • 1/2 cup  brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg

INSTRUCTIONS:

  1. Preheat the oven to 180 °C (350 °F). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the oats, flour, cinnamon, salt and set aside.
  3. In another bowl, mix the butter with brown sugar and vanilla with an electric mixer until smooth and fluffy (about 5 minutes).
  4. Add the egg and beat until smooth. With a wooden spoon, stir in the dry ingredients.
  5. With an ice cream spoon, scoop the balls of dough onto the baking sheets, leaving 2-inch between each. With your hand lightly flatten the cookies.
  6. Bake for about 14 minutes, until cookies have a golden brown color on the sides.
  7. Cool on the sheet then transfer to a cooling rack.
