ALFREDO ZOODLES WITH SALMON

I have been having this recipe on my mind since I started making simple zucchini noodles. Ok let me start completely from the begging. Me and my hubby are loving grilled zucchini. During the grilling season (which in Canada is just few months) we are filling the BBQ with slices of zucchinis like crazy.
But once the season is over, how do we enjoy our lovely zucchini? I ain’t crazy about round slices heated in a skillet, doesn’t really open my taste buds. But since I have been on Instagram, I have been hearing about zoodles. And you know me, seeing new stuff, new products, I have to try it.
So my first experience is with simple peeler from Dollarama, yes I have a peeler from Dollarama hihihi. Trying to make these thin slices of zucchinis (we can’t be talking about zoodles at this point) that shape didn’t even had a name, what was coming out of the peeler.
Well with some long experience I was able to peel few nice slices of zucchini, but it was never enough for the whole family and there was so much waste (the core of zucchini was impossible to slice), that I decided to look for a proper tool to make real zoodles.
And I was looking quiet while. First in the kitchen shops, they were selling only bulky, big and expensive spirilizers. So then I tried internet and found one shop through Instagram. My kitchen gadgets are selling many great kitchen products, but for me at that moment, the most important was their vegetable spirilizer. Yes they are selling this 2 in 1 Vegetable Spirilizer from MY KITCHEN GADGETS
I found it as a great gadget for my kitchen, because it’s small, easy to use and it even has two sized cutting chambers. One for smaller vegetables and the other for larger vegetables. I enjoy making my zoodles with this kitchen gadget and not only that, I am using it as well for other vegetable salads or meals. My kids loves their spirilized carrots for snack.
Zoodles are very low on calories, so if you are on a low carb diet, this is a perfect substitute for classic noodles. My usual preparation is simple saute zoodles on olive oil with garlic and some seasoning. This would be the easiest preparation of zoodles. Little tip: Do not saute more then 3-4 minutes, because zucchinis are slices very thin, so they cook very fast.
When I say saute, it means medium – high heat and quick saute. If you opt for simple version of saute zucchini noodles, then reheat your skillet on medium high with 1 Tbsp of olive oil, add 1 minced garlic, saute for a minute or until garlic gets golden, then add zoodles and saute for few minutes, season and serve.
With Alfredo zoodles preparation will be the same, only at the end of saute your zoodles, you will add Alfredo sauce and baked salmon. Do not let the zoodles on the heat for too long, because they will become mushy. Remove from pan and serve immediately.
RECIPE
ALFREDO ZOODLES WITH SALMON
Preparation time: 15-20 minutes⭐working time: 40-45 minutes⭐ servings: 4 portions
INGREDIENTS:
- 3 medium zucchini cut into noodle shapes with spiralizer
- 2 pounds of salmon
- 1 Tbsp olive oil
- 3 Tbsp butter
- 3 cloves garlic , minced
- 3 Tablespoons all-purpose flour
- 2 cups milk
- 1/4 teaspoon dijon mustard
- 1 1/2 cups freshly grated Parmesan cheese
- salt and pepper
INSTRUCTIONS:
- Preheat oven on 177C/355F and bake seasoned salmon (salt & pepper or your favorite seasoning) on baking sheet covered with parchment paper, drizzled with olive oil for 20 minutes.

In a saucepan heat the butter on medium- high heat. Add garlic and cook until fragrant or golden brown. Whisk in flour and continue whisking to remove large clumps of flour.

Slowly whisk in milk. Whisking regularly, bring to a simmer and then reduce heat to low. Simmer and cook until sauce thickens, about 3 minutes.

Add mustard, fresh grated Parmesan cheese. Add salt and pepper to taste. Keep aside.

In a large skillet, reheat olive oil and add zucchini noodles and saute for 3-4 minutes. Do not overcook the zucchini noodles or they’ll become mush.
- Add Alfredo sauce and pieces of baked salmon in the skillet and toss all together.

Serve warm. Enjoy!
