Beehive cookies with Matcha cream is a little twist on classic Czech cookies called Vcely uly. Classic beehives are made out of nuts and sugar, filled with eggnog or rum buttercream. But this time, I am adding little of Matcha powder to add some colours.
What are Beehive cookies
Beehive or in Czech Vcely ulky are traditional Christmas cookies, prepared with ground nuts, confectioner sugar, pasteurized egg whites and rum. The dough is not baked, and it’s filled in a small mold in the shape of a beehive.
The bottom is usually made out of round Linzer cookie or round wafers. Filling is usually made out of butter, sugar and rum. But this time I am twisting a little of this recipe, and I am adding Matcha powder to bring more colour and different taste to the traditional beehive cookies.

- Confectioner sugar
- Egg white

How to make beehive cookies
We will be assembling Matcha beehives cookies from three different parts. The body; beehive, the wafer or linzer cookie and matcha green tea powder buttercream. I will explain all steps below, what to start working on first and how to assemble these eye-catching cookies.
Prepare the base cookies or wafers
If you can’t find round wafer cookies in the grocery store, you can make your own. I have a recipe how to make very simple linzer cookies here. If you decide making the base from linzer cookies, make only half of the batch. You will need only 20 pieces.
No bake beehive dough
This dough is no bake and is very simple to prepare. In a medium kitchen bowl add all the ingredients: ground walnuts, sugar, cocoa, egg white and teaspoon of rum. You can substitute milk for butter, if you do not like to use it.
Combine it all with a wooden spatula and at the end work it a little with hands. The dough will easily get together. Leave it in the kitchen bowl, cover it with food wrap and let it rest for 30 minutes in the refrigerator. After 30 minutes, the mixture will become easier to handle.
Dust the beehive cookie mold with confectioner sugar and place a small piece of the dough inside. Remove excess of the dough. With an index finger make the hole and gently open the mold to remove the beehive. You will make approximately 20 beehives.
Matcha buttercream
Gather all the ingredients for Matcha buttercream. In a medium kitchen bowl, mix soft unsalted butter with sugar. Mix until creamy. Add Matcha powder and mix until well combined. At the end add the teaspoon of rum and mix to combine.
Assembling the beehive cookies
Place the matcha buttercream in a piping plastic bag, cut a 1/4 inch opening and pipe the cream inside the beehives. Pipe small dollop onto the wafers/Linzer round cookie and place the beehive on top of it. Sprinkle some Matcha powder on the assembled beehives.

Ingredients
For the no bake beehive dough
- 150 g ground walnuts
- 200 g confectioner sugar
- 1 tsp cocoa powder
- 1 small egg white
- 1 tsp rum dark
For the base
- 20 round vanilla wafers
For the Matcha cream
- 90 g butter softened in room temperature
- 60 g confectioner sugar
- 1 tbsp Matcha powder
- 1 tbsp rum or milk
For decoration
- 1 tbsp Matcha powder
Instructions
For the no bake beehive dough
- In a medium kitchen bowl, combine all the ingredients for the beehive dough with a wooden spatula. Work the dough also with your hands if it doesn't come well together with the wooden spatula.
- Leave the dough in the kitchen bowl and cover it with food wrap. Let it chill for 30 minutes in the refrigerator. After 30 minutes, the mixture will become easier to handle.
- Dust the beehive cookie mold with confectioner sugar and place a small piece of the dough inside the mold. Remove excess of the dough with your hands. With an index finger, make a hole and gently open the mold to remove the beehive. Repeat until you use all the dough.
For the Matcha cream
- In a medium kitchen bowl, start mixing with hand mixer, soft unsalted butter with sugar until creamy. Matcha powder and mix until combined. At the end add rum/or milk and mix until creamy.
- Place the matcha buttercream in a piping plastic bag without any tip. Cut a 1/4 inch opening and pipe the cream inside the beehives. Pipe also small dollop onto the wafers/linzer round cookie and then place the beehive on top of it. Sprinkle some Matcha powder on the assembled beehives.
