Crispy cauliflower mini fritters with curry sauce are delicious idea for snack, appetizer or parties. You can choose to fry them for crispiness or bake them for healthier option. Either way, they are so delicious.

This post is about good tasty fritters! It’s good, crunchy, cheesy, bacony and healthy as well, because we are adding some veggies in it! It’s like eating carrot ice cream, it tastes good, because it’s creamy, but still healthy, because of the carrots factor, right?
What am I up to? I am up to some good cauliflower mini fritters or you can call them cauliflower thick pancakes, mini fritters, patties or however you wish. These are going to be so good, cheesy & tasty!!
How to get your kids (& adults) eat more veggies?
As any other mom out there, I am trying to feed my kids with more vegetables. I could be writing stories here about veggies vs kids! How many recipes I have tried, to get more veggies in my kids diet, since they were toddlers. How many veggie fights we had and how many tricks I tried on my kids to get them eat more vegetables. Almost non of it helped! So I got the idea to cook regular recipes and adding vegetables as ingredients. And they love it. They actually started to eat some vegetables cooked directly in meatloaf or these cauliflower fritters.
How to make mini fritters
Main ingredients for cauliflower mini fritters
- cauliflower
- potatoes
- onion
- ham or bacon
- mozzarella & parmesan
- eggs
- seasoned bread crumbs
- all-purposed flour
- salt and pepper
Cook cauliflower florets & potatoes
Gather first all your ingredients and wash and peel potatoes. Wash cauliflower head and cut it in florets. Bring a large pot of salted water to a boil and cook cauliflower and potatoes for 10-20 minutes or until tender. I have tries once to start cooking only potatoes and later on adding the cauliflower, because I thought it would be too mushy, but actually it will not. It’s easier to toss everything in one pot and cook it together.
Drain the cauliflower with potatoes and transfer them into large kitchen bowl. Or if your pot is large enough you can use it to combine the ingredients inside. Mash the cauliflower with potato masher & set aside to let it cool. Reheat 1 tbsp of vegetable oil in large skillet on medium heat and fry chopped onion for 2-3 minutes or until golden. Add cubed ham and fry the ham together with onion until slightly browned, stirring occasionally.
Mix it all together
Remove the skillet from the heat and add it to the mashed cauliflower and potatoes. Also add these remaining ingredients: cheeses, eggs, breadcrumbs, flour and season with salt and pepper. If you have a favourite seasoning like garlic salt or celery salt, feel free to use it.
Combine all the ingredients with spatula. With a help of an ice cream scooper, start to roll balls in a size of ping-pong balls or the size of your ice cream scooper. Mine is quite small and has similar size of ping-pong ball. Then flatten the patties between palm of your hands to the shape of mini cakes. Don’t flatten it like cookies. Leave a little height, around 1/2 inch. And cover them in seasoned breadcrumbs. I always buy breadcrumbs with Italian seasoning.
Frying option for mini fritters
Heat large skillet to medium/high heat with the rest of the vegetable oil and fry mini fritters for 3-4 minutes per side or until golden brown. Try to fit as much as fritters you can into the skillet.
Place mini fritters on plate lined with paper towel to remove excess oil. Serve them immediately with curry dipping sauce & arugula leaves.
Oven baked option for mini fritters
Reheat oven on 350F/177C (middle rack). Place fritters on baking sheet lined with parchment paper and bake for 20 minutes or until breadcrumb cover will turn golden and it’s crispy. Place mini fritters on plate with arugula leaves and curry sauce.
Curry sauce
To have the best foodie experience, you must make a sauce dip. I love curry seasoning, so when it comes to fried food, I love curry sauce. Try this curry sauce and if you don’t like it, just use different seasoning. Instead of curry, you might try sweet paprika, herbs seasoned salt. For the heat you can add Tabasco sauce or your favourite hot sauce. So how to make curry sauce? Place all curry powder, mayonnaise, fresh lemon juice, salt & pepper to season in small bowl and mix with spoon. S
How to store leftovers
The Best way to store fried fritters, is to place it in airtight container lined with paper towel. Keep it in refrigerator up to 5 days. Reheat in oven, this will keep it crispy. You can always reheat in microwave, but it will not be crispy anymore.

CAULIFLOWER MINI FRITTERS
Equipment
- Large skillet
Ingredients
- 1 head of cauliflower washed and cut in florets
- 2-3 medium potatoes washed, peeler and cut in small cubes
- 1 small onion peeled and chopped
- 1 & 1/2 cups ham cut in small cubes
- 1 cup mozzarela cheese shredded
- 1/2 cup parmesan cheese shredded
- 2 large eggs
- 1 cup seasoned bread crumbs +1 more cup for covering
- 1/2 cup all-purposed flour
- salt and pepper
- 1 cup vegetable oil for frying
- 2 cups arugula leaves for garnish
Curry sauce
- 2 tsp curry powder
- 1 cup mayonaise
- 1 tbsp fresh lemon juice
- salt & pepper to season
Instructions

Notes
- If you don’t like cauliflower, you can also use broccoli as a vegetable substitute.
- If you want to keep this recipe strictly vegetarian, you can omit ham cubes.
