This sweet sugary glaze with light cinnamon flavour, directly on Brazilian grilled pineapple is the best dessert combo on the BBQ ever. You can eat it as is or top it with your favourite ice cream.
What is Brazilian grilled pineapple
You must have heard at least once in your life about amazing Brazilian grilled pineapple, covered in sugar-cinnamon glaze. I have first tried in at our local Brazilian style restaurant and it was so sweet and juicy and I could stop waving at the server to bring some more.
Basically Brazilian grilled pineapple is a pineapple coated in mixture of brown sugar and cinnamon, then grilled on open BBQ. Some people also baste the pineapple in butter. With the heat, the sugar and cinnamon starts to melt and caramelize. This creates light sweet crunch around the flesh of the pineapple and that’s what is so delicious.
Is it easy to prepare grilled pineapple?
So I have decided to replicate the restaurant served grilled pineapple, because it’s super easy and it’s great for the family or friends summer gathering. And you don’t need to worry about baking dessert, because you will be grilling it.
You only need to clean and cut the pineapple lengthwise on quarters and then remove the fibrous core. I do not trim the skin nor the crown with leaves, because it serves as nice decoration and as a plate. But if you wish to have a clean pieces of pineapple, then remove the crown and the skin.
How do I make the sugar-cinnamon glaze
The simplest part, you will measure combine brown or golden sugar with cinnamon powder. The sugar-cinnamon glaze is so flavorful! It caramelizes lightly on the BBQ, so the edges are slightly crunchy. And if you add a scoop of your favourite ice cream, it’s a heaven. I had this peanut-chocolate-vanilla ice cream, what you can see on the pictures and it was so scrumptious.
I think little drizzle of chocolate over the pineapple, would also be a great idea or little drizzle of melted butter. But best is original, with just that delicious sugar-cinnamon glaze is really exceptional.
Which pineapple is better? Fresh or canned?
Definitely fresh and ripe pineapple is recommended to use on the grill. Canned pineapple is way too tender. Before you would have a chance to turn it, it would completely fall apart.
The process of make Brazilian grilled pineapple
Step no.1 Cut the pineapple
Wash the pineapple and place the pineapple on cutting board. Cut the pineapple in half. Then take one half of the pineapple and turn it with flesh down. Cut in quarter. Repeat same with the other half of the pineapple. Keep the leaves and the skin on.
Now remove the fibrous core from the centre (from each wedge) How much of the core to remove? Usually I remove 1 inch. It is the lightest and hardest part inside the pineapple.
Step no. 2 Coat the pineapple in sugar-cinnamon coating
Once the pineapple is cleaned of inner core, you can apply the mixture of sugar and cinnamon. Mix the sugar and cinnamon first in medium kitchen bowl and apply it with your hand on the pineapple. Let it set in refrigerator for 30 minutes.
Step no. 3 Grilling the pineapple
Now it’s time to grill the pineapple. Get ready, your BBQ will get slightly messy, because of the sugar-cinnamon mixture. The sugar coating will melt on the pineapple and it the pineapple will be lightly sticking to your grill. You can avoid this situation by brushing the grill rack with melted butter or spray with vegetable oil, before heating the BBQ.
It is also very easy to remove the melted sugar afterwards. Simply after the pineapple is grilled and you will remove it from the grill, heat the BBQ on high, until the sugar pieces will burn (darken). Then you clean your BBQ as usual with the BBQ brush.
Preheat BBQ to medium heat and add pineapple in the grill, with skin down. Grill the pineapple from one side for 15 minutes, BBQ closed. Lower the heat to minimum and turn the pineapple on the other side (on the skin) and continue grilling for another 10 -15 minutes (BBQ lid closed). Check the pineapple often, to make sure it doesn’t burn. While grilling the pineapple, you can add some resting sugar-cinnamon mixture, directly on pineapple flesh.
Step no.4 Serve the grilled pineapple
Remove the pineapple from the BBQ and let it sit for 5 minutes. It will be hot. Cut the slices by sliding pairing knife in between the skin and flesh of pineapple. Then slice it on 1 inch big pieces. You can brush the pineapple with melted butter before serving or with big scoop of ice cream.

BRAZILIAN GRILLED PINEAPPLE
Ingredients
- 1 large pineapple cut into wedges
- 1 cup brown sugar
- 2 tsp cinnamon
- 2 tbsp melted butter (for grill)
- vanilla ice cream (optional)
Instructions
- Wash and cut the pineapple in wedges. Keep the leaves on.

- Check the pineapple often, so it doesn't burn. You can add the resting sugar-cinnamon mixture on the pineapple, while grilling.
- Remove the pineapple from the BBQ and let it sit for 5 minutes. It will be hot. Cut the slices by sliding pairing knife in between the skin and flesh of pineapple. Then slice it on 1 inch big pieces. You can brush the pineapple with melted butter before serving or with big scoop of ice cream.
