- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup unsalted butter cubed
- 5 cups macaroni or other pasta
- 1 dash pepper
- 4 cups warm milk
- 4½ cups mixed cheese mozzarella, cheddar, romano, parmesan, shredded
- 1 teaspoon Paprika
- 1 ½ cup bacon
- 1 small onion
- 2 cups frozen green peas
Cook macaroni in a large pot according to package directions. 4 liters of water. Meanwhile, in a large saucepan, cook the bacon, chop the onion and add it to the bacon.
Remove excess fat from bacon and add butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in warm milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes longer, or until thickened.
Stir in cheese until melted. Drain macaroni; add to cheese sauce and stir to coat. Add 2 cups of green peas and let simmer for 2-3 min. If desired, sprinkle with paprika.
