PEACH STREUSEL SQUARES

Peach cake in form of squares/bars topped with streusel are going to be your next favourite summer cake. Juicy from fresh peaches chunks and sweet streusel topping will melt in your mouth.

Ingredients

Peach bars

  • 4 extra large eggs room temperature
  • 1 cup (220 g) fine sugar
  • 2 cups (250 g) of all-purpose flour
  • 1 tsp of baking powder
  • 1/2 cup (125 ml) canola oil
  • 8 large peaches

Streusel topping

  • 1/2 cup (110 g) fine sugar
  • 1/2 cup (115 g) unsalted butter room temperature
  • 3/4 cup (150 g) all-purpose flour

Instructions

Peach bars

  • Preheat the oven to 350 F/ 177 C and grease with butter and flour a large baking pan 20″ x 12″ or glass baking dish of similar dimensions.
  • Wash and cut the peaches in thin slices, about 0.5″, set aside.
  • In a large bowl, mix the eggs with sugar for about 5 minutes, or until they become creamy. Add canola oil, spoon by spoon.
  • In another bowl, mix flour and baking powder together. Add half of the flour mixture to the egg mixture and mix well until combined. Then do the same with the other half of the flour mixture.
  • Pour the batter in the baking sheet and place the peaches slices on the batter.

Streusel topping

  • Mix all the ingredients together with your hands; flour, sugar and butter. Squeeze the streusel mixture in your hands, breaking into small clumps. Then sprinkle evenly the streusel topping over the peaches.
  • Bake in the oven 350 F /177 C for 30 -35 minutes or until the streusel is golden brown and a toothpick inserted into the centre of the cake comes out clean.
  • Transfer the pan to a wire rack and let cool for 15 minutes. Cut into squares 3″ x 3″ and serve.
