These juicy summer peach bars are the best that could have happened to me. Fluffy and soft vanilla cake base and juicy fresh peaches with streusel topping. This cake is literally on our table every week. We eat it for breakfast, for snack, even for supper when my kids can’t wait until I cook.
And did I mention that it’s baked in 30 minutes. So easy and simple to make this peach cake, that the rest of the day you will be chilling with a cup of coffee and kids happily snacking on this yummy coffee cake.
And I am taking a full advantage of keeping summer in my kitchen, by making this golden peach streusel cake squares. I want to keep this beautiful odour of baked peach streusel in my kitchen forever! I have never seen my kids so happy, running around the table and asking for some more of peach streusel and of course a nice chilled glass of milk. That is how my kids love to consume the cakes.

Yes, this is why I want to keep this summer peach cake in my memory forever! Do you have sometimes a moment in your kitchen; when all the action is happening, and you might sometimes be a little agitated, because of the dishes or any other chore in your kitchen, but then the timer rings, and you open the door of the oven and everything just goes away?
And you are taking a deep breath and your nose inhales all that sweet baked warm cake in the oven. And with that inhalation all the worries goes away, and you are in the moment of serenity and joy. You just don’t want these moments to go! You want to keep these moments forever! And so I do! Well, this is how I feel when I am making this peach streusel squares.
Ingredients for peach streusel squares
For peach bars
- eggs
- white sugar
- all-purpose flour
- baking powder
- canola oil
- large peaches
For streusel
- white fine sugar
- unsalted butter
- all-purpose flour
What is streusel topping?
Do you know what streusel topping is? It is a crumbly topping or filling made from butter, flour, sugar, and often cinnamon. This time we will leave the cinnamon out, because it doesn’t go well with peaches. So here is how we make a fast peach cake with streusel topping.
How to make peach cake with streusel topping
Preheat the oven to 350 F/ 177 C and grease with butter and flour a large baking pan 20″ x 12″ or glass baking dish of similar dimensions. Wash and cut the peaches in thin slices, about 0.5″, set aside.
In a large bowl, mix the eggs with sugar for about 5 minutes, or until they become creamy. Add canola oil, spoon by spoon. In another bowl, mix flour and baking powder together. Add half of the flour mixture to the egg mixture and mix well until combined. Then do the same with the other half of the flour mixture.
Pour the batter in the baking sheet and place the peaches slices on the batter.
Streusel topping
Mix all the ingredients together with your hands; flour, sugar and butter. Squeeze the streusel mixture in your hands, breaking into small clumps. Then sprinkle evenly the streusel topping over the peaches.
Bake in the oven 350 F /177 C for 30 -35 minutes or until the streusel is golden brown and a toothpick inserted into the centre of the cake comes out clean. Transfer the pan to a wire rack and let cool for 15 minutes. Cut into squares 3″ x 3″ and serve.

- 2 cups (250 g) of all-purpose flour
- 1 tsp of baking powder
- 1/2 cup (125 ml) canola oil
- 8 large peaches
Streusel topping
- 1/2 cup (110 g) fine sugar
- 1/2 cup (115 g) unsalted butter room temperature
- 3/4 cup (150 g) all-purpose flour
