Hazelnut crescents ๐Ÿฅ๐ŸŽ„

Hm, hazelnut crescents are my favorite, these cookies are the first one on my list to do for Christmas. I love hazelnuts and this is why I am crazy about these cookies. It is fairly simple recipe, so I guess that is another reason, why it is on my list as first cookies to make.

I always make triple batch, because these are not only my favorites, but also my son’s favorites. He is able to steal 10 pieces easily under my watch ๐Ÿ™‚ hihi. I love him, he always knows how to warm my heart, with saying: “Mommy, you are the best chef ever and these cookies, hm yum, very delicious!

If you don’t like hazelnuts or you are allergic to, you can always substitute for almonds, walnuts, pecans….I guess even with pistachios it would work out, I have never tried, butย  actually thinking it, it might go pretty well with pistachios, this is my next challenge, imagine the color, wow!!!…..:-)))

INGREDIENTS:

  • 300 g all purpose flour
  • 200 g softened butter
  • 100 g granulated sugar
  • 80 g ground hazelnuts with skin
  • 1 cup of icing sugar
  • 2 pkg of vanilla sugar

INSTRUCTIONS:

  1. Preheat your oven on 170C / 340F.
  2. On clean working surface, mix with hands flour with sugar and ground hazelnuts.
  3. Add butter cut in small cubes and you start to incorporate butter with dry ingredients by hand.
  4. Knead until non sticky dough is created.
  5. Cover with plastic foil and let cool in refrigerator.
  6. Take the dough out of the refrigerator and on dust a working surface with bit of flour, start to knead the dough with your hands until soft.
  7. Grab a small piece of a dough (size of a smaller ping pong ball) and roll in between your palm of hands and create small roll.
  8. Shape the roll in small crescent.
  9. Place the crescent on a baking sheet, covered with parchment paper, make an inch space in between the crescents (because they will rise and might get glued together while baking).
  10. Bake for 10-12 minutes.
  11. In a medium bowl, mix now icing sugar with vanilla sugar and once the crescents are baked (let them cool off a bit, so you don’t get burned, cover them in this sugar mixture. And it’s done! Now you go and taste ๐Ÿ˜‰

These hazelnut crescents are so soft and delicate. They melt in your mouth, as soon as they get closer to your mouth, you will smell the aroma of vanilla sugar. Once you bite in it, it’s just gently crunchy, but soft and melt in your mouth. Hm, I am eating one right now!!
