What ingredients are used for these coconut candies
- Sweetened condensed milk
- Unsweetened shredded coconut
- Blanched almonds
- Mini paper baking cups
How to make Raffaello Coconut Balls
As I mentioned, this no-bake Raffaello Coconut Balls requires only 3 ingredients: Shredded coconut, condensed milk and blanched almonds. I always use unsweetened shredded coconut, because the condensed milk is enough sweet. Condensed milk is easy to find in every grocery store and blanched almonds are very easy to make at home, if you can’t find in your local grocery store.
Take the condensed milk and combine it with unsweetened shredded coconut. Use a spoon to blend the ingredients well together. Use your hands to shape a ball and then insert inside the blanched almond. At the end roll it in extra shredded coconut and voilĆ it’s done! It is always better to chill the Raffaello coconut balls in the refrigerator for 15 minutes, so it hardens a bit.
How to blanche almonds
In a small pot or saucepan, get the water to a boil. Toss in the almonds you want to blanch. Leave them in the boiling water for 60 seconds. Drain the almonds and rinse them with cold water to quickly cool them down. Squeeze each almond to remove its skin. That’s it!
Storage & Tips
For the best results, store Raffaello Coconut Balls in airtight container in the refrigerator. And consumed them within 5 – 7 days.
Use a measuring spoon to make sure to have always the same quantity of the coconut mixture. The Raffaello coconut balls will look more professional when they will be in the same shape and size. If the mixture is too sticky, add more shredded coconut.
On the other hand, if it’s too dry, add a bit more of condensed milk or simple syrup (sugar with water). The texture might be very sticky, in this case, coat your hands with shredded coconut or dip them in slightly warm water, each time you roll a ball.
