Creamy mini cheese balls

I have brought these cheese balls for the first time to little wine pairing party in between girls and it was this simple version with cream cheese and old cheddar and few herbs. And since then, this is my appetizer number one, when I am invited over to my friends.

Simple, easy and fast made cheese balls, delicately covered in roasted nuts. You can add any kind of cheese into this simple mixture for cheese ball and create your very own recipe. For example with Parmesan, Swiss or Blue cheese.

If anybody likes it more cheesy and spicy, you can add stronger cheeses such as shredded mix of cheeses for nachos or spicy Havarti cheese. You might also add little drops of sriracha sauce or few crushed chili seeds into the mixture to spice it up.

I used few herbs to add nice perfume to my cheese balls, such as parsley, chopped very finely and 2 little chives. You can use any other spices or herbs, such as rosemary, basil or chopped cranberries or pistachios, the creativity is all up to  you, you can create your own mini cheese balls with this simple base recipe.

To cover the cheese balls, I roasted handful of almonds,  roughly chopped. The second batch I covered in black sesame and it looked fabulous. There are endless possibilities in covering the cheese balls, you can cover it with chopped dry cranberries or any other nuts or chopped herbs.

The Best way to accompany mini cheese balls, is little crackers or small slices of apple or thin pieces of bread, preferable toasted. I accompanied mine with little stalks of dill. It is pleasant aromatic herb, used mostly to accompany fishes and cheeses. Very common in Easter Europe, where is plays big role in seasoning for pickled food to be canned and stored for the winter.

Preparation time: 15 minutes ⭐ resting time: 15 minutes ⭐ servings: 12 mini cheese balls


  • 250 g (1 pkg) cream cheese
  • 120 g (1 cup)  old cheddar
  • 2 chives chopped
  • 1 Tbsp fresh parsley chopped
  • Salt, pepper
  • 1 ½ cup raw almonds, chopped and toasted


  1. Beat the cream cheese with old cheddar in small bowl with mixer, until well blended.
  2. Add all remaining ingredients except almonds, mix well.
  3. Shape into small balls, roll in toasted  chopped almonds and refrigerate for 15 minutes.
  4. Serve or store in air tight container. Enjoy!
