My dear readers, this is one of my favorites cheesecake bites ever! I can’t believe, that none has ever told me, hey Julia, why don’t you make cheesecake bites? Oh ok, maybe you don’t know, but I love cheesecakes so much and by so much I mean, I can eat cheesecake all day long LOL!!

Not sure, if you believe me with the all day long eating cheesecake :-)… So yes, I love and I’ve made so many cheesecake recipes already….hihihi. And that is why I am surprised, that it’s the first time I am trying some cheesecake bites.

These strawberry cheesecake bites recipe are so simple. They are made from from simple cheesecake base and coated in strawberry white chocolate, then topped with cookie dough. It is a frozen dessert, so we will be working in few phases, where we will prepare the cheesecake batter, freeze it, then create the bites and then freeze it, coating it in strawberry white chocolate and again freeze it.


It might sound a long process, but it is way worth it. So you will need to prepare first the batter, you toss all the ingredients in a medium freezable bowl and with a help of hand mixer you mix it until smooth. You will need to as well melt a bit of white chocolate to add it to your batter. Then you need to freeze it for 1 hour or just until the batter will be mushy, so you can create small balls with your hands.

Use a tablespoon to measure the same quantity of cheesecake bites. And don’t worry about the shape. Mine are not perfect at all, most important is the taste and that will be blow-minding. Once all the bites are shaped, place them on baking sheet covered with parchment paper or use large freezable Tupperware to place the bites in it. Freeze it until very well hard, about 30 minutes.

Now it’s time to coat them in strawberry white chocolate. I used white chocolate chips and added strawberry dry powder in it, but you can use food coloring or even take few strawberries, blend them and strain them (to remove seeds), then you add it into your melted white chocolate.


How to melt white chocolate.

Best way how to melt white chocolate is over the stove. This method is called bain-marie (hot water batch). Heat a small pot with several inches of water. Cover the top with a tightly fitting, heat-proof bowl. Make sure that the steam cannot escape. Also, check to make sure the surface of the water does not touch the bottom of the bowl. Allow the chocolate to melt in the bowl, stirring occasionally, until it is completely melted. Remove from the heat and stir to make sure it’s a smooth consistency.

Once your chocolate is melted, you add in the strawberry powder and stir until it’s well blended. Take out from freezer your cheesecake bites and place them on baking sheet covered with parchment paper.  You can also use the rimmed baking sheet or baking cooling rack, so the excess of white chocolate can me reused.

Use tablespoon to cover the bites with chocolate, one by one. Make sure you cover all sides. On the top (optional) you can sprinkle cookie dough or you can sprinkle strawberry powder or strawberry coulis. All up to you, how you want to decorate it.


Freeze the covered cheesecake bites for 30 minutes or until the chocolate is firm and serve either lightly frozen immediately (it taste like ice cream yum)  or let it defrost in room temperature for 5-10 minutes. These are so yummy. Enjoy them!



Total preparation time: 1 hour⭐freezing time: 2 hours⭐ servings: 30 small balls

Cheesecake balls

  • 225 g (8 oz) cream cheese, room temperature
  • 225 g (8 oz) white chocolate chips
  • 1 teaspoon vanilla extract

Strawberry chocolate coating


  1. In freezable bowl, whip cream cheese with hand mixer until smooth. Melt 8 oz of white chocolate chips on the stove top using method bain marie and add into the cream cheese, along with the vanilla extract. Mix until combined and freeze for 1 hour or until filling is stiff.
  2. Remove from the freezer and roll your filling, with a help of teaspoon, into 30 small balls. Place on a baking sheet and freeze for 30 minutes to hardened slightly.
  3. Melt the rest of the white chocolate and add the strawberry powder. Stir until well blended.
  4. Use teaspoon to cover the cheesecake balls with strawberry white chocolate.
  5. Decorate with cookie dough or sprinkles and let the chocolate set in the freezer for 30 minutes.
  6. Thaw in room temperature for 10 minutes to enjoy it.
