Summer days are finally coming! Even though here in Canada month of May started with some rainy and chilly days (we have so much rain this year😒), I believe this appetizer will make a smile on your face. Not only because it will remind you of summer days, but just looking at the picture, you must salivate for sure. This is, one of the easiest appetizers ever! Everybody eats mozzarella cheese and tomatoes. And bread and it this case I serve the appetizer with fresh baguette and let me tell you, it’s amazing! It is actually the marriage of Italian and French cuisine. If you know what I mean; mozzarella is from Italy and baguette from France…. 😂
Excuse me, am I forgetting something here? Yes wine, how could I forget 🙂 Well ,we already have a marriage of French and Italian cuisine, so why not to take an Australian wine with it. Which one? Oh, let me leave it on you, this will be your choice. Choose the wine you love to drink and enjoy the appetizer!
Serving 4 persons.
- 2 8 oz Ball (BUFFALO) of Mozzarella Cheese
- 2 medium ripe tomatoes
- 4 large leaves of basil
- Extra Virgin Olive Oil
- Balsamic Vinegar
- 1 baguette
- 1 bottle of wine 🍷 (optional ☺)
- Slice the Mozzarella, Tomatoes in your desired thickness.
- Layer the Tomatoes and Mozzarella on a plate.
- Drizzle the olive oil and balsamic vinegar over the Tomato and Mozzarella.
- Season with salt and pepper.
- Serve with fresh baguette.
- Accompany with glass of red wine 🙂
And there you have it. This appetizer can be prepared in ahead, covered in plastic food wrap and kept in the fridge until the guests arrive.
You might also substitute the tomatoes for cherry tomatoes and the buffalo mozzarella for bocconcini and you can prepare skew tomato and mozzarella. You can add pieces of prosciutto with it, few pieces of cantaloupe or honey melon. Many options to choose from, it all depends on your imagination.
