Chicken fajitas are a simple Mexican dish. Marinated chicken pieces, served in soft tortillas and topped with sour cream and cheese. Chicken fajitas are a great addition to a weekday easy recipe menu for the whole family.
What does chicken fajitas contain
For chicken fajitas, you will need chicken breasts cut in stripes 1/2 inch thick and approximately 3 inches long. Red bell peppers and onion cut in these slices. Mexican spices for the seasoning. Mild grate cheese, like mozzarella. Lime or lemon juice for the flavor and Bell pepper for texture.
Can fajita be done with different meat ?
Fajitas can be done with chicken breasts cut in stripes, skirt steak, ground meat or even with fish. The most common fajitas are done with grilled skirt steak. Fajitas with chicken are in milder taste and also the safest way to serve to younger children or those you dislike red meat.

Chicken fajitas marinade
The best way to prepare fajitas, is to marinate the chicken with onions and bell pepper. It will tenderize the meat, as well as the vegetables. You can use store bought mix for chicken fajitas, or you can follow here my recipe for homemade spice used for the chicken fajitas marinade.

Prepare a large bowl where you will mix first all the dry ingredients. Add canola or olive oil and water. Whisk with a spoon or kitchen whisk. Cut the chicken breast in strips, as well as the onion and bell peppers. Place in into the bowl with the marinade and mix with your hands. Wash your hands and cover the bowl with plastic food foil and refrigerate for 30 minutes. You could also prepare this marinade with chicken breasts a night before cooking chicken fajitas.
How long to cook chicken fajitas?
It all depends on how big your chicken strips are cut. I like them thinner and shorter. I always cut my chicken breasts 1/2 inch large and about 3 inches long. Best is to use medium chicken breasts. They are easier to cut. If you have larger chicken breasts, I would recommend cutting the chicken breasts in half lengthwise and sidewise. Smaller chicken strips, shorter time for cooking.
Preheat a large pan with canola or olive oil and cook the marinated chicken strips for 10-15 minutes, stirring occasionally. I use tongs to toss the chicken strips around on the pan. Chicken is already seasoned with salt and other spices, so it is not necessary to season again. Taste the chicken before serving if it’s salty enough.
How to serve fajitas ?
We love chicken fajitas with cheese, salad, sour cream, salsa and sometimes cilantro. As we all have different taste, I usually prepare on the table all above, and we are dressing the fajitas in tortillas ourselves. My favorite way is to start with sour cream on the bottom, following the chicken, cheese (so it has time to melt), salad and salsa on top. You can also use some hot sauce to spice up the flavor. You serve your chicken fajitas with your favorite toppings.
How to store fajitas
Best way to store fajitas, are when they are decomposed. If you have a tortilla already filled up with all the chicken, salsa and toppings, it’s going to be saggy the next day. I do not recommend to store already filled tortilla. Try to place all the leftovers separately in the airtight container and place it in the refrigerator. Except tortillas, can stay in their own packaging (best if with sealer) and stored in the pantry. Use the chicken within 5 days. The rest can be stored up to 1 month in the refrigerator, if well sealed in an airtight container.

EASY CHICKEN FAJITAS
Ingredients
Chicken fajita marinade
- 2 tablespoons chili powder
- 3 small cloves garlic minced
- 1 tablespoon garlic powder
- 2 tablespoon paprika in powder
- ¼ teaspoon pepper
- 1 teaspoon salt
- ½ teaspoon ground cumin
- 1 medium lemon
- 2 tablespoon canola oil
- 2 tablespoon water
Chicken fajitas
- 2 tablespoon canola oil
- 4 pieces chicken breasts
- 1 onion chopped
- 2 medium bell peppers red and yellow
- 1 cup shredded cheese mozzarella or cheddar
- 1 cup mild salsa
- 1 cup sour cream
- 8 medium flour tortillas
- 1 cup lettuce chopped (optional)
- 1 tablespoon cilantro chopped (optional)
Instructions
Chicken fajita marinade
- Mix all the ingredients in a large bowl and set aside.
- Cut the chicken breast on stripes 1/2 inch large and about 3 inches long and add them to the marinade. Slice onions and bell peppers and add them to the marinade as well.
- Cover the bowl with a plastic wrap and place it in the refrigerator for 30 minutes.
Chicken fajitas
- Reheat canola oil in a large pan over medium-high heat and add the marinated chicken with the onion and bell peppers. Cook for 10-15 minutes, stirring occasionally, until the chicken is cooked.
- Serve the cooked chicken fajitas on a flour tortilla, top with cheese and sour cream. Sprinkle with chopped cilantro.
